Roasted Garlic Parmesan Cauliflower


°1.25 L (5 cups) small cauliflower florets
°45 ml (3 tbsp) olive oil
°1 ml (1/4 tsp) salt
°1 ml (1/4 tsp) black pepper
°0.6 ml (1/8 tsp) crushed red pepper flakes
°125 ml (1/2 cup) grated parmesan cheese
°5 ml (1 tsp) grated lemon zest
°Italian persis (flat) chopped fresh, if desired


Preheat the oven to 200°C (400°F). Spray a 37.5 x 25 x 2.5 cm (15 x 10 x 1 inch) baking dish with cooking oil.
In a large bowl, combine the cauliflower, olive oil, salt, black pepper and red pepper flakes. Spread into the pan.
Grill 20 to 25 minutes, stirring occasionally, until cauliflower is tender and golden. Remove from oven; sprinkle with Parmesan cheese and lemon zest. Garnish with chopped parsley.
