Cheesy Ground Beef and Potato Casserole


Ingredients:


1 pound ground beef, crumbled

1 yellow onion, diced

3 to 4 pounds potatoes, peeled and sliced

8 ounces or more Cheddar cheese, shredded

1 can Cheddar cheese soup mix

12 ounces evaporated milk or whole milk

1/2 cup milk

1 teaspoon salt

1/2 teaspoon pepper

Instructions:


Preheat the oven to 350°F (175°C) and generously spray a 9x13 baking dish with non-stick cooking spray.

In a large skillet, cook the diced onion and crumbled ground beef until the meat is thoroughly cooked.

Slice the potatoes into approximately 1/4-inch slices.

Arrange a single layer of potatoes at the bottom of the prepared baking dish and sprinkle with salt and pepper.

Spread about one-third of the cooked ground beef mixture evenly over the potatoes.

Sprinkle one-third of the shredded Cheddar cheese on top.

Repeat the layers with potatoes, ground beef, and cheese two more times, ending with a layer of cheese on top.

In a separate bowl, combine the Cheddar cheese soup mix, evaporated milk (or whole milk), and optional salt and pepper to taste.

Pour the soup mixture over the layered potatoes and ground beef in the baking dish.

Cover the baking dish tightly with aluminum foil and place it in the preheated oven.

Bake for approximately one hour.

Remove the foil and continue baking for an additional 15 minutes to achieve a golden, bubbly topping on the cheese.

If the potatoes are thicker, you may need to bake the dish for a longer duration.

Once done, remove from the oven and let it cool for a few minutes.
