Cranberry Orange Bread with Simple Glaze1

 


Ingredients:

For the Loaf:

1 1/2 cups + 1 tablespoon all-purpose flour, divided
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup plain whole-milk yogurt
1 cup sugar
3 large eggs
2 teaspoons grated orange zest
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1 1/2 cups cranberries, fresh or frozen (thawed and rinsed)
For the Orange Syrup:

1/3 cup freshly squeezed orange juice
1/3 cup sugar
For the Orange Glaze:

1 cup confectioners' sugar, sifted
2 to 3 tablespoons fresh orange juice
Instructions:

Preheat the oven to 350 degrees F. Grease the bottom and sides of a 9 x 5-inch loaf pan, then dust with flour, tapping out any excess.

In a medium bowl, sift together 1 1/2 cups of flour, baking powder, and salt. Set aside.

In a large bowl, whisk together the yogurt, sugar, eggs, orange zest, vanilla extract, and vegetable oil. Gradually whisk in the dry ingredients until well combined.

In a separate bowl, toss the cranberries with the remaining tablespoon of flour. Gently fold the floured cranberries into the batter.

Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.

While the loaf is baking, prepare the orange syrup. In a small saucepan over medium heat, stir together the orange juice and sugar until the sugar is completely dissolved. Cook for an additional 3 minutes, then remove from heat and set aside.

Once the loaf is baked, let it cool in the pan for 10 minutes. Then transfer the loaf to a wire rack placed on top of a baking sheet.

Use a toothpick to poke holes in the top and sides of the warm loaf. Brush the orange syrup over the top and sides, allowing it to soak into the cake. Repeat the brushing process for a second coat. Let the loaf cool completely.

To make the orange glaze, whisk together the confectioners' sugar and 2 to 3 tablespoons of fresh orange juice in a small bowl. The glaze should have a thick but pourable consistency. Add more orange juice if needed to achieve the desired consistency.

Pour the orange glaze over the top of the cooled loaf, allowing it to drip down the sides. Let the glaze harden for about 15 minutes before serving.
