ngredients:


1 package (14.5 oz) nacho cheese Doritos chips, lightly crushed

2 1/2 cups cooked chicken, shredded

1 can (13.25 oz) black beans, rinsed and drained

1 can (13.25 oz) whole corn kernels, rinsed and drained

1 1/2 cups grated Mexican blend cheese, divided

1 can (10 oz) diced tomatoes with green chiles

1 can (4 oz) diced green chiles

1 can (10.75 oz) condensed cream of chicken soup

1 container (8 oz) sour cream

1 tablespoon taco seasoning

Instructions:


Preheat the oven to 350ºF (175ºC) and lightly grease a 9x13-inch baking dish with non-stick spray.

In a large bowl, combine the shredded chicken, black beans, corn, 1 cup of Mexican blend cheese, diced tomatoes and green chiles, cream of chicken soup, sour cream, and taco seasoning. Mix together until well combined.

Spread half of the lightly crushed Doritos chips into the prepared baking dish, creating an even layer.

Pour the chicken mixture over the Doritos and spread it into an even layer.

Bake in the preheated oven for 20 minutes.

Remove from the oven and sprinkle the remaining Doritos and cheese on top. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

Remove from the oven and serve the casserole hot, garnished with cilantro if desired.

Notes:


If you prefer a spicier flavor, you can add a can of diced jalapeños or some chopped fresh jalapeños to the mixture.

Leftover rotisserie chicken can be used instead of cooking chicken breasts for this recipe.

This casserole can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking. Just remember to add the remaining Doritos and cheese right before baking.

If you want to freeze this casserole, it can be stored for up to 3 months. Thaw it overnight in the refrigerator before baking.
