Easy stuffed pepper soup


My kids enjoy snacking on peppers, so we keep them in the fridge at all times. This is the recipe I generally use when I need a quick and easy meal idea. It's also a great way to use up any leftover rice from another dinner. All the flavors combine to create a truly delicious and simple soup that will please the whole family.

°1 cup finely chopped onion
°1 can (29 ounce) chopped tomatoes
