Discover the art of roasting vegetables in this fail-proof recipe. Roasting is the key to unveiling an irresistible depth of flavor and achieving the ideal tenderness in your veggies. It's become my staple for midday meals, pairing a generous serving of these gems with a bowl of quinoa and a squeeze of fresh lemon. Simple and nutritious never tasted so delicious!


Ingredients

Half of a medium-sized red onion, peeled and chopped into 1-inch chunks

1 1/2 teaspoons of Italian seasoning

2-3 cloves of garlic, minced

2 medium-sized carrots, peeled and cut into 1/4-inch-thick slices

2 tablespoons of olive oil

1 medium-sized broccoli crown, separated into small florets (stem can be saved for another use)

2 medium-sized bell peppers, seeds removed and chopped into 1-inch pieces (I used one red and one yellow for variety)

1 cup of grape tomatoes (optional)

1 small zucchini, with ends trimmed, sliced lengthwise then cut into 1/2-inch pieces

Salt and freshly ground black pepper to taste

1 tablespoon of fresh lemon juice


Instructions for Roasting the Perfect Vegetables


Start by preheating your oven to 200 degrees Celsius or 400 degrees Fahrenheit. Spread the bell peppers, zucchini, broccoli, carrots, and red onion evenly across a rimmed 13-inch baking sheet.


Drizzle the olive oil generously over the assorted veggies. Season the mixture with Italian seasoning, pepper, garlic, and salt. Toss everything together to ensure the ingredients are well combined.


Transfer your prepared veggies to the preheated oven and allow them to roast for about 15 minutes.


After this time, pull the sheet from the oven, add the tomatoes, and give everything another good toss to combine.


Return the baking sheet to the oven and continue roasting for an additional 10 minutes.


Once done, remove from the oven and sprinkle the lemon juice over the top of your beautifully roasted veggies.


Serve immediately and relish in the medley of robust flavors and hearty textures. Enjoy your perfectly roasted vegetables!
