Best homemade sauce ever

What are the signs of good conditioning? Salsa of course!

Or do I use the plural and say "salsa"? Who wouldn't love to have a variety of sauces to choose from, whether at a taco truck or a full-fledged restaurant? There is often salsa verde Tomatillo, red pepper salsa and my favourite, a fresh tomato salsa also known as pico de gallo or salsa fresca.

Fresh tomato sauce is best prepared with firm and fleshy tomatoes. You can, of course, make the sauce with any kind of tomato, but it is best to use firm varieties such as tomatoes or greenhouse tomatoes.

When using fresh pepper, always taste before adding! Some peppers are hotter than others and you can't tell unless you taste them. Just take a little bait. You will be able to gauge the heat of the peppers and will be better able to judge how much you need.
