Ingredients:
1/2 cup Bisquick (See tip below for a homemade version)
3/4 cup sugar
4 eggs
2 cups milk
1 cup flaked coconut
1 tsp. vanilla extract
1 TBS. softened butter
Instructions:
Preheat your oven to 400 degrees.
In a mixing bowl, combine all the ingredients. Mix well until all elements are nicely incorporated.
Pour this mixture into a 9-inch pie pan that's been lightly greased with butter.
Bake in the preheated oven for about 25-30 minutes. You'll know it's ready when the custard has set, and the top has a nice golden hue.
Remove from the oven and let it cool.
Savoring the Magic:
Once cooled, you can slice and serve this pie, relishing each layer from the crusty base, through the creamy custard, and up to the crispy coconut topping.
Tip:
If you're out of Bisquick, don’t fret! You can make a substitute by combining 1 cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 tablespoon of oil or melted butter.
