This soup is so delicious, I could eat it all summer long

1 pound (450g) Italian sausage, thinly sliced

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

1 can (14.5 ounces) diced tomatoes

4 cups (946ml) chicken or vegetable broth

2 cans (15 ounces each) white beans, drained and rinsed

1 teaspoon each of dried thyme and oregano

4 cups (120g) fresh spinach, roughly chopped

Salt and pepper to taste

In a skillet over medium-high heat, brown the Italian sausage, then transfer to the slow cooker.

Sauté onion, garlic, and carrots in the same skillet until soft, then add to the slow cooker.

Add diced tomatoes, broth, white beans, thyme, oregano, red pepper flakes (optional), salt, and pepper to the slow cooker. Stir to combine.

Cook on low for 6-8 hours or high for 3-4 hours, allowing flavors to meld and vegetables to soften.

Before serving, stir in chopped spinach and let it wilt. Adjust seasoning as needed.

Serve this sumptuous soup in bowls, garnished with grated Parmesan and fresh parsley if desired. Enjoy with crusty bread or a side salad for a complete meal. Embrace the versatility and rich flavors of this soup, making it a cherished addition to your culinary collection."
