A great side at Christmas

* Ingredients : 

°1 box of pistachio pudding

°20 oz can of raw pineapple

°2 cups of mini marshmallows

°1/2 cup chopped pecans

°1 container of thawed cooler

(8 ounces)

* Methods :

Start by mixing the dry pudding mix, crushed pineapple, baby marshmallows, and chopped walnuts. Next, fold in the melted Cool Whip until well blended. Refrigerate to serving time.

This recipe can easily be doubled for a large family dinner. You can serve this as a dessert item but I put it on the table with the main dishes. It's always a hit.

You can serve this in a large bowl or if you use it for individual desserts in clear glazes or clear cappuccino cups garnished with maraschino cherries, it makes a great presentation. 

Note: This dessert is sometimes referred to as "Watergate Salad" because Jello came out with a pistachio flavor in the same year (1976)
